Chocolate and Peanut Butter Layer Cake

My sister’s been watching a lot of Cake Boss lately, which means I’ve been watching a lot of cake boss lately.

It’s a cool show to watch, there’s no doubt about that, but I do have some pretty big problems with it. One being the attitude of everyone in it. I get that working in a bakery would be stressful, but seriously? Everyone on that show seems like they’d be such a pain to work with.  And their voices are just so whiny!

I also get pretty annoyed with the cake Buddy’s making over there.  Or rather, the lack of cake.  As I see it, the cakes may look awesome, but the taste is probably far from it.  I could be wrong, but when has frozen ever tasted as good as just baked?  And who wants rice krispie treats when they asked for cake?  Or even worse, PVC piping.  Yuck!

Conclusion: In my opinion, a less attractive, but delicious cake is better than a beautiful, but less delicious one.

Which brings me to today’s recipe.

This Chocolate and Peanut Butter cake is super duper yummy.  However, it is not super duper pretty.  I mean, it’s pretty in the yummy homemade cake kind of way way, but not the Cake Boss way.  But you know what?  I’m okay with that.

I wasn’t going for looks with this cake, I was going for taste.  I was soooo successful on that level.

The chocolate part of this cake is fluffy, but not so much that it feels like it’s not there.  The texture isn’t gummy, but it is a little fudgy and makes the cake taste super rich (even though it’s on the healthier side).  The peanut butter frosting is super creamy, and you totally won’t believe it’s made mainly with peanut butter and greek yogurt.  You’ll want to eat it by the spoonful.  Trust me.

Actually, you’ll want to devour all of this cake.  It’s Saturday, you’re hungry; do what you know you want to do and bake this thing!

Chocolate and Peanut Butter Layer Cake

Prep Time: 15 minutes

30 minutes

Total Time: 45 minutes

Yield: 8 slices

This delicious Chocolate and Peanut Butter Cake is also good for you, thanks to a healthy secret ingredient.

Ingredients

Cake:

1 1/4 cup spelt flour

1/2 cup special dark cocoa powder

1/4 cup sugar

1 tbsp baking powder

1 1/2 tsp baking soda

400 g raw cauliflower

3/4 cup buttermilk

1/2 cup applesauce

1/3 cup maple syrup (or agave nectar or honey)

2 eggs

1/4 cup peanut butter

Frosting:

2 cups plain greek yogurt (or try vanilla flavored)

1/2 cup peanut butter

2 tbsp maple syrup

2 tsp vanilla

Instructions

    For Cake:
  1. Preheat oven to 350F. Grease two 8 in round pans.
  2. In a large bowl, mix together flour, cocoa powder, sugar, baking powder, and baking soda. Set aside.
  3. In the container of a blender of food processor, measure out cauliflower, buttermilk, applesauce, maple syrup, eggs, and peanut butter. Blend until mixture is completely smooth.
  4. Pour wet ingredients into dry and mix until a smooth batter forms.
  5. Divide batter evenly between two prepared pans and smooth into an even layer.
  6. Bake in preheated oven for 30 minutes, or until cakes are firm and a toothpick comes out clean.
  7. For the Frosting:
  8. Measure yogurt into a medium sized bowl.
  9. Add all other ingredients and mix until incorporated.
  10. Remove one cake from pan and set on a large plate. Use frosting to spread a thick layer on top of first piece of cake.
  11. Place other cake on top and spread frosting on top of that cake too. If you have leftover frosting, you can spread it around the sides.
  12. Store in fridge until serving time.
